this allows for a better thermal exchange and avoids elevated fermentation temperatures

All of the Pinot in 21 had sluggish ferments to varying degrees due to the drought

Principally planted to Nerello Mascalese

2021 Domaine Elian Da Ros 'Outre Rouge', Cotes du Marmandais, France Royal Tokaji Aged for ~ 11 monthsThis rouge clair (light red) is something between a red and ros, and is produced from a blend of 85% Abouriou, with the rest equal parts Malbec, Syrah, and Cabernet Franc. The grapes are vinified using three different techniques carbonic maceration, saigne, and press then blended in tank, and aged in foudres on the fine lees to make an unusual and surprising wine thats perfect when served slightly chilled.
