Grapes are hand harvested, fully destemmed, and fermented using native yeasts in temperaturecontrolled vats. Maceration lasts ~15 days with regular pigeage and remontage. Aged 18 months in French oak (25% new, balance 12 yr old), bottled unfined and unfiltered.
